I love pumpkin pie...and with Farmer's Market I can make my own organic pumpkin pie in about 5 minutes (plus baking time, but that doesn't really count). I always make it without the crust, since we aren't big crust fans anyway, and that cuts out a big chunk of the calories...
I usually just dump the mix into the pie tin, add the evaporated milk and eggs, and stir it all up- which saves on dishes. The pie isn't the absolute *best* pumpkin pie I've ever had, but it is a good one, and I am willing to sacrifice a wee bit of taste for knowing that the pie is a lot better for me and for the environment (organic pumpkin and spices, free range organic eggs...I just need to find a good organic brand of evaporated milk!).
I am won over- I stock up on a few cans whenever I see it on sale. :)
